I did all of those in high school. But there was a fun one where the freshman had to choose a senior and dress up like them. The girl who picked me had to ask me what to wear and how I did my hair!
So in your case, 7th graders could pick 8th graders. It's hilarious because everyone has to see who the "twins" are!

Have everyone speak in Elizabethan English. Provide a
glossery of typical terms like: thee, thou, verily, forsooth, quill,
etc. and have Elizabethan food for lunch. There are lots of
sites on the 'Net about Shakespeare who have food, vocab,
and lots more on them. Teachers can go with the flow and teach
about how the world was in 1600 b.c.e. We had fun with this!!
